Pastries of the future: good yes, but above all day. With this goal PARART, a movement to defend authentic craftsmanship in pastry making, has started its own collaboration with the UNESCO Chair of Naples, providing her with some sweets with low or no sugar content to carry out a double test, blind sensorial and on blood values. The purpose? “Promote the health of the population by acting on cultural, nutritional and environmental factors”. Furthermore, the Movement will participate on 6 and 7 October with a stand at Naples Health Campus (2-8 October 2023, Rotonda Diaz, on the Lungomare Caracciolo near the Tennis Club), to offer everyone confectionery specialties designed to also be consumed by the public suffering from certain pathologies.
Giving priority to natural raw materials and avoiding the use of artificial, chemical or non-natural ingredients is the imperative on which the association is based. The other fundamental aim of PAART is to experiment with new methods and new products, always starting from tradition and natural ingredients, with particular attention to health. This theme is expressed in two ways: not only to offer healthier and more genuine pastry products to a general public, but also to offer sweet specialties that are not harmful to those suffering from certain pathologies.
The products at Campus Salute 2023
The products present at Campus Salute were created by leading professionals in the sector. The cheese cake will be offered to the public Guido Sparaco, from the pastry shop of the same name in Castel Morrone, founding member of PAART, the Health Cake of Michele Cappiello, PAART member with pastry shop in S. Maria Capua Vetere, the cocoa muffin and the dried fruit and banana cake from Canio Cumuniello, PAART member with pastry shop in Genzano di Lucania.

“When PAART was born last year, we already had a clear priority to give to experimenting with innovative products and methods, to demonstrate that a pastry shop inspired by tradition is able to blaze new trails, respecting not only taste, but also of health. The pediatric and adolescent population is the most vulnerable, and I must remember that obesity is the first step in the development of serious pathologies such as diabetes, cardio- and cerebrovascular diseases and cancer. The possibility of offering foods of great palatability and quality but at the same time, with an eye on human health can only be pursued vigorously", commented the professor Annamaria Colao, chairholder of the UNESCO Chair of Naples, internationally renowned clinic and past-president of the Italian Society of Endocrinology.
