Neapolitan pizza: Japan establishes a university course and a pizza maker rises to the chair as a teacher

Until now in Italy everyone knew the famous University of Pizza of Vico Equense of Gigino, historic pizzeria known for pizza by the meter born from an intuition of the baker in the XNUMXs Luigi Dell'Amura, also known as “Gigino O' Zuzzuso', patented in 1959 and a sanctuary of Neapolitan pizza a must for all those who come down from Naples to the Sorrento and Amalfi coasts. The name is due to the fact that Gigino was one of the first to organize real professional courses to train pizza makers capable of making quality Neapolitan pizzas.

But now in Japan they have gone much further and take it seriously. At the Pizza, the first case in the world, have dedicated a real university course and have also appointed a professor in charge of carrying out lessons on Pizza, a UNESCO universal heritage. To climb to the chair at the Ritsumeikan University of Shiga/Kyoto will be Manabu Odawara, pizza maker a head of the Japanese delegation of AVPN, Associazione Verace Pizza Napoletana.

“It is somehow about an epochal event - highlights Antonio Pace, AVPN President – which confirms the status achieved by Neapolitan pizza even in countries very far from us for gastronomic traditions. The fact that an important university sets up a course linked to our product fills us with pride and testifies, let me tell you, also the goodness of the work done in recent years by our Association to promote and disseminate the culture of pizza all over the world”.

The event will be made official on the occasion of the mission to Japan of the Associazione Verace Pizza Napoletana, scheduled for 28 and 29 November, with a busy calendar of commitments for the delegation led by President Pace and Director Stefano Auricchio. In the Sede of the Ritsumeikan University of Shiga/Kyoto which has a teaching room complete with a wood-burning oven and all the necessary equipment) there will be an exchange of plaques and a seminar on fried pizza.

The mission in Japan is part of a AVPN's extensive program of initiatives to spread the culture of Neapolitan pizza around the world. In Canada on November 8 and 9 the Association has provided for the affiliation of 10 new pizzerias and to lay the foundations for the creation of a delegation, made up of 25 affiliates, confirming the attention that North America reserves for one of the symbolic products of Made in Italy.

Then it was the turn of the Turkey where on Monday 21 November the AVPN President Antonio Pace and the instructor Marco Leone have inaugurated the first Turkish branch of the association in the prestigious USLA in Istanbul of the American Hospitality Academy with a related course that immediately sold out with 10 subscribers. The school will be directed by Ozgur Kilinclar, AVPN student and today owner of 3 Nappo pizzerias, the first affiliates in Turkey.
