Big news in the Florentine restaurant and hotel industry: starting July 1st, Starhotels Michelangelo Firenze opens its doors to Trattoria Da Burde, a historic Florentine establishment founded in 1901 and a benchmark of Tuscan culinary tradition for 125 years. The new restaurant brings the city's most recognizable gastronomic identity to the heart of Starhotels hospitality.
A restaurant institution, Da Burde is known to generations of Florentines and Tuscan cuisine enthusiasts for its dedication to traditional recipes, its commitment to the finest ingredients, and its wine selection, among the city's finest.
"Welcoming Da Burde to the Starhotels Michelangelo means strengthening the hotel's connection with the city and offering our guests an experience that expresses Florence through one of its most authentic expressions: cuisine," says Mauro Polmonari, General Manager of Starhotels Michelangelo Florence. "For Starhotels, hospitality isn't just about the stay, but also about the ability to help guests discover the region and its excellence. This project is a step in this direction: making the hotel restaurant an open space that connects with the city."
The menu remains faithful to the historic recipes of the Via Pistoiese trattoria, along with some of Grandma Irene's home-cooked classics, with subtle additions for the summer season: from lampredotto to pappa al pomodoro and panzanella, from beef tartare to tripe salad, from Florentine-style cod to pici pasta with Tuscan white ragù, and even fried steak and peposo (a kind of pasta dish). In addition, of course, to other classics that have made Da Burde a symbol of authentic Florentine cuisine, such as crostini with chicken livers served with a glass of Vin Santo. These are complemented by a more informal menu, designed for hotel guests and room service, featuring a simple and contemporary international selection—salads, club sandwiches, gourmet burgers—accompanied by a selection of Burde wines. The wine list will also contribute to the region's rich history, a journey designed to showcase Tuscany's winemaking heritage and complement the new restaurant's culinary experience.
“When I cook, I always think of those who came before me in this kitchen, which was also my grandmother's kitchen where she cooked for our family,” comments Paolo Gori, founder of Trattoria Da Burde. “It's 125 years of family stories and handed-down flavors: the recipes we bring to Michelangelo aren't reworked to please everyone: they're the ones we've always made, with the same ingredients, the same timing, the same skill. Lampredotto is lampredotto, cod is cod. Florence has a precise, uncompromising flavor, and we have no intention of taming it. Those who come to us should feel like they're eating the way Florentine food has always been eaten, not the way someone imagined Florentine food to be eaten.”
The initiative, born from a shared vision with Fedegroup, a leading Italian food and beverage services company, marks a significant step in Starhotels' strategy to showcase the gastronomic excellence of the regions in which it operates within its properties.
