Vizzari: we are witnessing the advance of a new Italian cuisine
"In these 30 years I have found myself commenting on the golden age of our gastronomy and the progress of the New Italian Cuisine, as we baptized it right on these pages" said the editor of the Guide Enzo Vizzari. “I sat down at the table as we were a people of good cookery craftsmen, poised between the echoes of great French cuisine and the rediscovered pride of our regional traditions. Today that I get up from the table, the cooks of Italy are much more than good craftsmen… We are a country of cultures and broadened borders, with strong women who are exemplary witnesses. It is true that unfortunately Italian restaurants still struggle to generate the right attention from the institutions and live in situations of objective fragility, but I am convinced that in the last thirty years we have not experienced the parabola of a shooting star but the birth of a new comet . We just have to keep looking to see and tell where it's headed”.
Lastly, as regards the "Best Pizzerias in Italy”, the Pizza d'oro award went to: Simone Padoan (The Tigli, of San Bonifacio), Gabriele bonci (Pizzarium, of Rome), Enzo Coccia (La Notizia, from Naples) e Frank Pepe (Peppercorns, from Caiazzo). Four pillars of the world of Italian pizza that have set the standard over time.
