Has a essential role in the curing of Prosciutto di San Daniele and in the conferment of aromatic traits which characterize one of the most successful Made in Italy products in the world. A miracle that repeats itself year after year. Going up the course of the river, the brackish Adriatic breezes meet the cold ones coming from the Carnic Alps, generating unique environmental conditions. It is precisely these factors that influence the level of humidity and the natural regulation of temperature, giving uniqueness to the peculiar microclimate of the hills of San Daniele. And it is thanks to its waters, al particular microclimate of the area, the careful selection of raw materials and a millenary processing technique, which gives rise to the inimitable taste of Prosciutto San Daniele DOP. The one between Prosciutto di San Daniele DOP and the Tagliamento river it is a perfect and successful marriage that has lasted for ages.
And this is why, on the occasion of World Water Day 2021, the Consortium of Prosciutto di San Daniele has decided to keep alive the theme of protection of water sources and counteract invasive interventions by man within the Tagliamento paying homage to the Tagliamento river, one of the last European waterways to preserve the natural hydrological conditions and the original morphology, with intertwined channels, which changes according to the weather conditions and the volume of 'water carried,. It is thanks to the uncontaminated nature of the river that, on the proposal of the WWF European Alpine Programme, the possibility of nominate the Tagliamento as a UNESCO World Heritage Site, the highest recognition for the protection of the cultural and natural heritage of the whole world.
Defined the “king of the alpine rivers”, the Tagliamento flows for 170 kilometers, crossing Friuli-Venezia Giulia from the Mauria Pass to the Adriatic Sea and skirting the city of San Daniele. The river was the scene, in the First World War, of one of the decisive battles of the Retreat of Caporetto. From 30 October to 1 November 1917, at the Ragogna bridgehead, the «Bologna» Infantry Brigade opposed more than two Austro-German divisions, resisting to the bitter end to slow down the imperial advance and allow the bulk of the Italian army to withdraw and reorganize the defensive maneuver within the protective front of Monte Grappa - Piave River. While the sacrifice of the «Bologna» Brigade was being consumed, the Bosnian soldiers of the Austro-Hungarian 55th Division invested the Cornino Bridge, a few kilometers further upstream. In the night between 2 and 3 November 1917, the enemy army broke through the Tagliamento line, forcing the Commander in Chief of the Royal Army, General Luigi Cadorna, to issue the order to retreat to the Piave. But there the course of history changed.
On the occasion of World Water Day 2021, the Consortium The Consortium implemented numerous activities in the area of waste control and water protection, including the wastewater disposal service. Even through a careful use of techniques for water purification, there is a continuous improvement of wastewater. Approximately 300.000 cubic meters are treated each year and, thanks to the technology used, it is possible to constantly monitor the quality of the water and the impact on the environment.
