Michelin Guide 2020: 3 stars return to Milan

The number of three Michelin-starred chefs in Italy rises to 11. Special Mentor Chef Michelin 2020 award to Gennaro Esposito, patron of the Torre del Saracino restaurant in Vico Equense, "undisputed actor of the current Italian gastronomic scene". Thanks to Enrico Bartolini, Milan can once again boast a three-Michelin-starred restaurant. The chef, who has won the highest recognition from the Red Guide with his Mudec restaurant in Via Tortona, represents the great novelty of the 2020 edition. The young Bertolini has a respectable cursus honorum: a first star in 2010 for le Robinie and then the second in 2011 for the Devero restaurant confirmed in 2017 when it arrives at the Mudec. The motivation of the Michelin judges recognizes "that his personality stands out for research and experimentation, harmonizing perfectly with the dynamism of Milan and giving an artist's touch to the rich Italian gastronomic heritage". 

With Bartolini three-starred restaurants in Italy rise from 10 to 11. Here after Bartolini are the other three-star restaurants that according to the Guide are worth a trip: Piazza Duomo in Alba (CN), Da Vittorio in Brusaporto (BG), St. Hubertus, in San Cassiano (BZ), Le Calandre in Rubano (PD) , Dal Pescatore in Canneto Sull'Oglio (MN), Osteria Francescana in Modena, Enoteca Pinchiorri in Florence, La Pergola in Rome, Reale in Castel di Sangro (AQ), Mauro Uliassi in Senigallia (AN). 

In total this year there are 33 new starred restaurants appearing on the culinary scene "offering their own, personal testimony of the infinite variations of the cuisine of the Bel Paese", which for the record it is the second country in the world for the number of starred restaurants. 

Another novelty of this year's Guide regards i two new entries among the 2 stars (35 in total): La Madernassa, in Guarene in the province of Cuneo where chef Michelangelo Mammoliti, born in 1985, offers a cuisine that expresses rigor, technique and precision, but the soul comes from Piedmontese tradition and products, to which are added seafood, exotic, sometimes Asian, and products personally grown by Michelangelo in the restaurant's garden”, and GLAM by Enrico Bartolini in Venice. "With a lot of imagination - reads the motivation - the "peach" menu in the Rialto market and not only for fish specialties, to which are added local recipes reinterpreted by the inspiration of chef Donato Ascani, born in 1987". 

Another novelty that will cause discussion concerns the great Vissani, his restaurant in Baschi has lost one of the two stars it had maintained in recent years, resulting, according to the guide's inspectors, worthy of only one..

Finally, 328 restaurants with "high quality cuisine, gratified with a Michelin star, which deserve a stop", of which 30 are new entries. In particular the regions richest in novelties are Lombardy, Campania and Tuscany, in which more than 50% of the new stars are concentrated. 

Lombardy is the region with the most stars, with 6 novelties: 62 restaurants (3 3 stars 5 2 stars 54 1 star). Piedmont, with 4 novelties, is always in second position, with 46 restaurants (1 3 stars 4 2 stars 41 1 star), while Campania, with 6 novelties, is in third place on the podium, with 44 restaurants, (6 2 stars 38 1 star). Followed by Tuscany, with 6 novelties, for a total of 40 restaurants (1 3 stars 4 2 stars 35 1 star) and, finally, Veneto, with 37, with two novelties (1 3 stars 4 2 stars 32 1 star).

Among the provinces, Naples is always at the top with 26 restaurants (6 2 stars 20 1 star), Rome in second position with 24 (1 3 stars 1 2 stars 22 1 star). Milan follows with 20 restaurants, whose vitality in many fields today also sees its gastronomic scene finally rewarded thanks to the new three-star rating. (1 3 stars 3 2 stars 16 1 star), Bolzano with 19 (1 3 stars 4 2 stars 14 1 star), Cuneo with 18 (1 3 stars 2 2 stars 15 1 star).

Another novelty of this year's Guide are the 4 special prizes: the Mentor Chef Michelin 2020, by Eberhard assigned to Gennaro Esposito, Torre del Saracino Restaurant, Vico Equense. “Since, as he likes to say,“ he chopped parsley and cleaned vegetables in the kitchens of his country's trattorias ”, Gennaro Esposito – reads the motivation – has always known that “he would be a cook ”. The 65th edition of the MICHELIN Italy Guide offers its readers not only a panorama of the best restaurants in the beautiful country but also 2700 hotels and restaurants.
