Pizzas with signature recipes: Domino's launches pizza with a DOP and IGP flavour

They are called Emiliana, Dolomitica, Mantovana: Chef Marco Valletta created them. Only regional DOP and IGP products from Sicily to Trentino are used

Pizzas with "author's recipes" and authentic regional flavours: this is the latest novelty launched in Italy by Domino's Pizza, the first chain of pizzerias in the world. Signature because Chef Marco Valletta, an expert in gastronomic culture and a well-known face on TV, was called to supervise the operation. But signature also because its components are chosen from regional IGP and DOP products, i.e. 100% Made in Italy excellence.

For the new creations, which are currently called Emiliana, Dolomitica and Mantovana, Domino's Pizza will purchase – only for the main ingredients (flour, tomato and fiordilatte) – a total of 130 tons a year. These volumes add up to even more substantial volumes of raw materials purchased which will further increase with the growth of the network in the coming months.

The products chosen by Domino's Pizza are the Fior di latte of the Campania tradition, the yellow and red Datterini tomatoes from the Piana del Sele, the Prosciutto Crudo di Parma DOP, the Parmigiano Reggiano DOP, the Treviso and Chioggia radicchio IGP, the Gorgonzola DOP, the Speck from Trentino-Alto Adige PGI, Mantua pumpkin cream, Pancetta Piacentina DOP, Pecorino Romano DOP.

Even before the launch of the new “Author's Recipes” line, Domino's added Italian products to the menu, such as DOP Buffalo Mozzarella, 100% Italian Tomatoes and DOP Gorgonzola.

“The search for taste must take place in the simplest and most genuine way possible – comments chef Marco Valletta – anyone must be able to recognize the ingredients of that pizza. We have created these recipes following the seasons, respecting the raw materials and appreciating the flavors of the different regions of Italy”.

The new line will be available in all 27 Domino's restaurants in Italy (including Milan, Bergamo, Bologna, Turin, Piacenza, Modena and Trieste) and, in addition to the traditional telephone or in-store ordering methods, customers will be able to order online via website and APP, also having the possibility to completely customize your pizza thanks to the "Pizza Builder". Domino's Pizza, during the first wave of the pandemic, with the aim of first and foremost protecting the health of its customers and collaborators, was the first to launch the Contactless Delivery service for pizza delivery.

 “This novelty”, explains Alessandro Lazzaroni, CEO of Domino's Pizza in Italy, “is further confirmation of our desire to continue focusing on top quality products and to let our customers enjoy pizzas prepared with fresh IGP and DOP ingredients. We are certainly a company with an international flavor, but we also know the tastes of our Italian customers well. For this reason we wanted to create recipes that combine regional quality and excellence with the speed and reliability of the service, including delivery, to always be the "best pizza at home".

Domino's, founded in Michigan in 1960, is today the leading pizza chain in the world with over 17.000 stores in more than 90 countries and annual global revenues of $14,3 billion (2019). In Italy, the chain is managed through a master franchising contract by Epizza Spa, an entirely Italian company that has been operating in the area since 2015. The chain's first store opened in Milan in October 2015 and there are currently 27 pizzerias in some of the main cities of northern Italy: Milan, Bergamo, Bologna, Turin, Piacenza, Modena and Trieste, Monza.
