Italian cuisine, the best known and loved in the world, has its King of the Year: it's Niko Romitor that the Guide to Gambero Rosso Restaurants he proclaimed today with his own Castle of Castel di Sangro [AQ] as best restaurant 2023 assigning it a score of 96/100 and the three forkstte. Following on the maximum podium of Italian cuisine of excellence they climbed into second position with 95/100 Massimo Bottura with the Osteria Francescana of Modena and Heinz Beck of La Pergola of the Hotel Rome Cavalieri Rome. Third podium with 94/100 Le Calandre di Rubano [PD] by Massimiliano Alajmo, Piazza Duomo in Alba [CN] by Enrico Crppa and Mauro Uliassi in Senigallia [AN].

Six high-sounding names that summarize the stratospheric levels of our own kitchen, names they get international awards and top positions in the most prestigious world food guides.

Raise the level of Italian cuisine: 44 Tre Forchette and 35 Tre Gamberi

In this thirty-third edition of the Gambero Rosso's Italian Restaurants Guide 2480 establishments are listed with 297 novelties. Increase the Three Forks (44) with 3 new entries in the Olympus of Italian cuisine, as well as the Tre Gamberi which pass to 35 with 1 new entry. 11 locals earn Three Bottles, the Three Globes are 6, as are 6 the Three Coccotte. The number (49) and types (24) of Special Awards also increased.

Three places with the Two Red Forks, i.e. the rooms that have the greater potential to reach the top: Arnolfo in Colle di Val d'Elsa [SI] and Piccolo Lago in Verbania [VB] with a score of 89; Pashà in Conversano [BA] with a score of 88.

In the last year, the return of foreign tourism in love with Italian beauties and flavors has given new life to catering. The premises of the great cities of art are filling up again, but also those off the beaten track in every corner of our country. New investments and new projects have often seen the protagonists of Italian cuisine as entrepreneurs. Despite the continuation of an extremely critical world situation, especially at an economic level, the great professionals continue to commit themselves to the virtuous terrain undertaken since last year: assessment and reduction of impact and waste, shortening of supply chains, valorisation of the territory, expansion - when possible – of self-production, from the small herbarium to the vegetable garden up to real farms. A trend that has given further impetus to vegetables as a "noble" element of the offer, with surprising results in terms of taste. It is therefore no coincidence that for the first time the Guide awards a prize to the best three vegetarian menus identified on a national scale.
