Divine Colomba: the best craftsmanship comes from Tuscany, the creative one is from Ariano Irpino

It is Stefano Lorenzoni from Sweet Pastry Art (Monte San Savino – Ar – Tuscany), the author of the best traditional artisan Colomba in Italy: has been a laureate of forty finalists since Divine Dove Award which ended at the Hotel Parco dei Principi in Bari.

Pompilio Giardino del went instead Pompilio Bakery (Ariano Irpino – Av – Campania) the first prize for the best creative Colomba in Italy.

 The technical commission of the fourth edition of "Divina Colomba" defined the ranking through the blind tastings of the forty finalist leavened products, made up of the president of the jury Giambattista Montanari of the Academy of Master Pastry Chefs of Italy, Francesco Borioli, co - founder of Infermentum, one of the most important realities on the national scene as regards the artisan laboratories of leavened products, Beniamino Bazzoli, winner of the "Best Panettone in the World 2020" award for the "Classic Panettone" category in the competition organized by the International Pastry Federation Gelateria (FIPGC), Massimo Ferrante, winner of the Lugano Panettone World Cup and again Giuseppe Mancini, Andrea Barile and Matteo Dolcemascolo.

If the best artisan Colomba is Tuscan, the silver medal in this category went to Vincenzo Baiano of Caffè Baiano (Marano di Napoli – Na – Campania) and also in the South the third prize went to Vito Saccente of the Saccente Bakery (Palo del Colle – Ba – Puglia).

Pugliese is also the runner up of the competition for the best Creative Dove, it is about Piero Netti of Chantilly Pastry Shop (Castellana Grotte – Ba - Puglia). Third podium for Samuele Segala of the Bakery Pastry Segala (Fumane – VR – Veneto).

Finally, the prize for "Best packaging", which went to the Fabozzi pastry shop in Casal di Principe (Caserta).

Now in its fourth edition, the "Divina Colomba" competition aims each year to increasingly enhance the artisanal production of the typical Easter cake with particular attention to compliance with the law (Decree 22 July 2005 Discipline of the production and sale of certain baked confectionery products (Official Gazette No. 177 of 1/8/2005) and the use of sourdough.
