Throughout Italy there are 595 places of maximum desire for gourmands, places where you can indulge in the most gratifying pleasure with the certainty of going without fail for goodness and quality. The map of all the sanctuaries of sweetness has been drawn by the Gambero Rosso 2022 Pastry Chefs & Pastry Shops Guide which has selected the top of the top by identifying it in 25 places awarded with the Three Cakes, also awarding five Special Prizes.
Let's say right away that the world of Italian pastry has experienced a golden year. At the end of September 2021 at the Coupe du Monde de la Patisserie in Lyon, Italy took back the scepter, placing itself once again on the top of the world, ahead of Japan and France. Thanks to Massimo Pica, Lorenzo Puca and Andrea Restuccia, a very strong and close-knit team that under the guidance of Alessandro Dalmasso has shown that united we win. The whole team was a special guest at the event; nothing better to celebrate a restart which, thanks to the newfound desire for socializing, to go out and have fun, in numbers comforts and bodes well for the future of the Italian pastry shop. Looking inside the laboratories, reality is lively, our great dessert artisans have shown all their flexibility, their ability to adapt and to think in perspective. “A sector in continuous and constant growth and evolution skilfully shaped by the great pastry chefs.” Paolo Cuccia, President of Gambero Rosso declares "Thanks to their constant commitment and their work, Italy is in the Olympus of world pastry". “Once again this year we are celebrating great Italian pastry” continues the CEO Luigi Salerno. “Masters who manage to transform the excellent raw materials made in Italy into creations that satisfy the eyes and the palate.”
The confirmation of the Tre Torte d'Oro award to Iginio Massari, owner of the Pasticceria Veneto, is taken for granted, an icon that has honored the Italian pastry shop in the world and an example for all those who want to approach the white art, in the list of the Tre Torte register two new entries.
Overall winner for the 2002 edition is Alessandro Dalmasso, owner of the Pasticceria di Avigliana (TO), a real temple of sweetness. “Quality, for me – is his philosophy – is the union of personally selected raw materials, technical skills, study, continuous research and boundless passion for my work. The taste that comes from my products must be an unforgettable sweet memory.” And of course he hasn't received any acknowledgments: Speaker in 2010 at the Word Pastry forum in Phoenix (USA - Arizona), elected "Pastry Chef of the Year" by the Italian Pastry Masters Academy, in 2011, nominated in 2012 appointed technical director of the Club Coupe du Monde section Italy, elected in 2016 president of the Club Coupe Du Monde de la Pâtisserie for the Italy section succeeding Maestro Gino Fabbri.
