Gambero Rosso pastry shops 2023: Alessandro Dalmasso wins the prize for the best pastry shop in Italy

The Grand Master of signature Italian pastry stands alone, the evergreen Igino Massari, with his Pasticceria Veneta of Brescia, out of the standings with the recognition of the THREE GOLDEN CAKES in the list of the best pastry shops in Italy compiled by the Guida del Red shrimp. A recognition that is renewed year after year for the man symbol of Italian pastry, founder of the Academy of Italian Pastry Masters, winner of the World Cup of Pastry in Lyon, Member, since 1985 of the prestigious international association Relais Dessert, elected pastry chef of the Year in 2000, over 300 awards received from 1964 to the present.

First classified with the Three cakes of the 2023 edition of the Gambero Rosso Guide is the Pasticceria Dalmasso of Avigliana [TO] of Alessando Dalmasso appointed at a young age president of the Club Coupe Du Monde de la Pâtisserie for the Italy section succeeding Maestro Gino Fabbri. The Biasetto pastry shop in Padua and La Maison Manilia on the Montesano sulla Marcellana [SA] are tied for merit.

Raise the level of Italian pastry: 50 new entries in this year's Guide

The Italian pastry certified by the Gambero Rosso 2023 Pastry Chefs & Pastry Shops guide is enjoying excellent health. Out of 620 addresses admitted to the Guide, as many as 50 are new, a sign of a strong effervescence in the sector, a variegated universe characterized by gender equality with an increasingly substantial presence of good professionals and the surprising pastry chefs (seven) included in the appendix dedicated to the masters of desserts who are entrusted with the difficult task of sealing the meal in sweetness and lightness.

Year after year, the level of professionals capable of intercepting the wishes of a clientele attentive to good, healthy and sustainable food increases. The territory and its excellences are the essential starting point, with ever increasing attention to environmental sustainability.

The panorama of pastry shops is also diversifying. An articulated panorama of establishments which, alongside the addresses in the big cities, sees many interesting realities from the small provinces and formats ranging from pure pastry shops to hybrid establishments.

There are 29 establishments that this year obtain the maximum recognition of the TRE CAKES, with 2 new entrances: the Roman Gruè, led by the tandem Marta Boccanera and Felice Venanzi who, in a classy setting, offer a refined offer in all its facets, and Caffè Cavour 1880, in Bergamo Alta (formerly Tre Tazzine and Tre Chicchi for the 2023 Italian Bar Guide), one of the tiles in the mosaic linked to the luminous galaxy headed by the Cerea family, one of the big names in the art of hospitality tricolor, an emblem of evolution in respect of one's roots.

In this category, the North beats everyone with 12 appearances, the South conquers 6 positions and the center is satisfied with 4.

The Guide then awarded 88 Due Torte awards, and prizes to the best Pastry Chefs in the branch of catering pastry.
