Mastro Panettone: 60 artisanal finalists from all over Italy

Three categories: traditional artisan panettone, creative chocolate panettone, artisan pandoro. The constraints: compliance with the specification, exclusive use of sourdough, forbidden candied fruit with sulfur dioxide and preservatives. The list of sixty finalists

Given the high quality level of the panettone in the competition, the judges asked for the possibility of increasing the finalists from 15 (as required by the regulation) to 20 per category. 240 leavened products examined (120 per category) entered by 151 pastry chefs and bakers who were evaluated on the basis of some fundamental characteristics: compliance with the specification, creativity (for the chocolate one), weight, quality of the ingredients, taste, shape, softness , perfume, honeycombing, cutting and cooking.

The announcement of the winners for the three categories will take place on Friday 6 November at the Excelsior hotel in Bari.

"Mastro Panettone", was born with the aim of making the category grow, improving more and more the artisan production. It is, in fact, the only panettone competition in Italy that does not place restrictions on the raw materials to be used, other than the use of sourdough and candied fruit without sulfur dioxide, and above all it is the only one that requires compliance with the disciplinary of law which indicates the shape, production process and list of ingredients with the minimum percentages of use of some of them. Competitors are required to use only sourdough and candied fruit without sulfur dioxide and not to use preservatives, emulsifiers, mono and diglycerides, as well as artificial colors or flavourings.

The 2020 Mastro Panettone jury is chaired by Francesco Borioli, co-founder of Infermentum, one of the most important artisan workshops of leavened products which has stood at the top of numerous pastry competitions in recent years. It also includes Antonio Daloiso, master pastry chef and winner of the first Italian edition of the television show "The greatest pastry chef", Fabrizio Donatone, winner, in January 2015, together with Francesco Boccia and Emmanuele Forcone of the Coupe du Monde de la Pâtisserie.
