To eat well, it is not mandatory to live only on starred kitchens and luxury restaurants, and it is not mandatory to take out a mortgage from the bank. There is a authentic and quality Italian catering, attentive and jealous custodian of genuine flavors, strongly linked to the territory and its products, far from any form of homologation, and it is that of the Italian taverns, a world to discover not only for the gastronomic aspects but also for the cultural and tourist aspect of areas often outside the big circuits. This world tells it Italian taverns 2023 Slow Food, a subsidiary of Italian eating, now in its thirty-third edition in bookstores from October 26 and on the Slow Food Editore online store.

Presented during an evening at the Piccolo Teatro Strehler in Milan, the Guide is the result of visits in 1730 between taverns, agritourisms, wine bars with cuisine and restaurants noted for their local cuisine, the rigorous selection of ingredients and the right priceor. Work carried out by 240 collaborators scattered throughout Italy.

The news of2023 edition: an excellent sign of the state of health of this specific catering segment is given by thehigh number of new entries – 139 new entries compared to the last edition, «many of which have recently opened and, above all, by young chefs and cooks, businessmen and women entrepreneurs who, among the many models offered by contemporary catering, have chosen to wear precisely that of the tavern», the curators Francesca comment in the introduction Mastrovito and Eugenio Signoroni. This is the case of young professionals who, after various experiences abroad, in totally different segments, such as fine-dining and in restaurants of a very different kind and calibre, choose to take on a precise form, which in its natural identity allows to also respond to contemporary questions on environmental and human sustainability through an authentic, genuine and welcoming story of the great wealth of biodiversity, culture and local food and wine tradition. This is a phenomenon which can be seen in large cities which draw on the recipes, ingredients and ideas of market cuisine, as well as in the provinces, even in remote and not easily accessible areas which are well worth the trip thanks to the taverns which are all effects destination of interest.

The region with the highest number of snails is Tuscany (27), followed by Piedmont (26) and Campania (25).

Next to the historic recognition of the snail, assigned to those taverns that stand out for their excellent proposal and for the environment, cuisine and hospitality in line with Slow Food's values ​​of good, clean and fair, And the bottle recognition, which indicates a wide range of wines, representative of the territory and with honest prices, in Osterie d'Italia 2023 there is a new recognition: the Drink Well, awarded to those taverns that offer, alongside or in place of a valid range of wines, a selection of alcoholic and non-alcoholic beverages - craft beers, distillates, cocktails but also juices, extracts and infusions - chosen with attention and personality. To rreceiving the Chiocciola in the thirty-third edition of the guide are 270 taverns, first of all La Campanara by Roberto Casamenti and Alessandra Bazzocchi from – Pianetto di Galeata (FC) while the Bottle and the Bere Bene were awarded respectively in 450 and 126 establishments. The region with the highest number of snails is Tuscany (27), followed by Piedmont (26) and Campania (25).

Ai symbols that guide the reader in the story of the proposal of each tavern - how the own vegetable garden, a selection of quality cheeses and identity, A good vegetarian offer, of wines by the glass and so many others – join two news which highlight the strengths, the excellences and the representative elements of the territory proposed by each tavern: the bread symbol, assigned to taverns with an excellent basket of bread and bakery products, self-produced or sourced from quality bakers, and the oil symbol, to places that enhance extra virgin olive oil both at the table and in the kitchen, according to a careful selection of products of excellence and representative of the territory.

A world that brings together taverns, producers and artisans, enhancing local food systems that take care of biodiversity and generate economy thanks to farmers' markets

To complete such a detailed cross-section are still the regional inserts, i.e. sections dedicated to realities with specific characteristics of each region, and which can only be found there: examples are the pizzerias in Campania, the stoves in Puglia and the piadinerias in Emilia-Romagna, and again the Tuscan tripe, the Ligurian farinotti and the Sicilian street food.

In short, a world that brings together taverns with producers and artisans, which enhances those local food systems that take care of biodiversity, enhance products, and make an economy thanks to farmers' markets, visits to farms and gas.

Now let's move on to the accolades.

The Best Host award went to Roberto Casamenti and Alessandra Bazzocchi from La Campanara – Pianetto di Galeata (FC). “The goal with which Roberto and Alessandra carry on their business is simple, and is pursued with as much passion as naturalness and authenticity: to make their guests feel good. It doesn't matter if it's for a dinner, for breakfast or for a glass of wine and a meatball in the garden: with them it's like when you go to visit a dear friend - and it's not just a saying, because friends of Roberto and Alessandra is easy to become”.

 The Best Wine List award went to Lorenzo Zirilli, art director of Acqua San Bernardo in Devetak – Savogna d'Isonzo (GO), with the following motivation: “in a nation like ours, where biodiversity is also expressed in a endless variety of vines, the story of the territory can and must often start right from the wine. In this, the Devetak family has few equals thanks to the cellar, a real anthology of Friuli-Venezia Giulia winemaking, and to a personal knowledge of each producer who finds hospitality there”.

 To win the prize Best Interpretation of Regional Cuisine was the Sora Maria e Arcangelo tavern – Olevano Romano (RM): “a welcoming, full and recognizable Sunday cuisine, which is inspired by the products and great classics of its territory but which is not afraid of contemporary touches, for a measured result, of great taste and memorable.
