The two years of pandemic that passed with the forced closure of restaurants for the first part of last year made us rediscover the bars close to home, socializing around an outdoor table like a trip to the past when bars were the only meeting place at the end of the day in the villages and in the countryside to rest after a hard day's work.

As was the case with catering, the bars too have drawn inspiration from the difficulties of the moment to renew themselves, to adapt their offer to the changing needs of customers, to offer new ideas, to enrich themselves with new proposals. In short, the sector has restarted with great programs and great determination. This is the picture that emerges from Gambero Rosso's 2022 Italian Bar Guide in partnership with illycaffè, now in its twenty-second edition.

The return to normality is therefore celebrated with the tables of the bars once again crowded at any time of the day: for breakfast, for the midday break, for the evening aperitif. And the Ho.re.ca. sector is also starting up again, albeit without leaving the difficulties behind - the negative relationship between new openings and closures, and some service problems due to reduced staff, are in fact still present.

The awareness that nothing will be as before, however, brings with it, together with the desire for rebirth, also new awareness for this segment: issues such as sustainability, enhancement of the territory, care for the environment and flexibility of the offer are no longer just accessories, but key elements to pay attention to to offer the customer the best experience. And if it becomes essential for bars, precisely because of their versatile nature, to raise the bar with an increasingly selective offer, the guide also encourages and rewards an approach increasingly based on absolute quality: choice of food with a short supply chain, seasonal of raw materials, use of recyclable materials, attention to renewable sources and plant-based nutrition.

It is therefore no coincidence that the “Illy – Bar of the Year 2022” Award went to CM CENTUMBRIE in Magione [Pg]. “A new generation structure – write the judges of the Guide – where the oil mill, the evo bistro, the bar and the mill are the driving forces of a multifunctional reality that pursues eco-sustainability with commitment (the crops – of legumes, vegetables, cereals, olives – are treated without chemical treatments, the use of plastic is being reduced as much as possible, the structures are ad high energy efficiency and the energy supply is from renewable sources. The jury of the Guide made up of Caterina Ceraudo, illy Chef Ambassador, Dattilo Restaurant in Strongoli (KR), Moreno Faina, Director of the illycaffè Coffee University, Violante Avogadro di Vigliano, illycaffè Global Communication Director, Laura Mantovano, Gambero Rosso editorial director and Marina Savoia – editor of the Bar d'Italia guide has smore than 1130 addresses were elected with – a positive figure – over 50 new entries. There are 43 establishments that have received the highest recognition of the Three Beans and Three Cups with 3 new entrances: Caffè Cavour 1880 in Bergamo, L'Ile Douce in Milan, CM Centumbrie in Magione (PG). 22 establishments in the Stelle category (the establishments that have obtained the maximum score for 10 consecutive years) with the entry of Morlacchi in Zanica (Bg); Gran Caffè Quadri in Venice and Il Chiosco in Lonigo (Vi).

The Aperitif of the Year award he returns to the city that first gave way to the ritual that has now become part of Italian life, awarded Clivati, in Milan.
