Here comes the "walking risotto" the alternative fast food

A risotto as an alternative to fast food that can meet the needs of one customers who want to eat healthy respecting the Italian culinary tradition. The idea comes from the Reting group which has been dealing with consultancy and development in the world of franchising for over 10 years and which launched the project Kikky. The innovative formula of Kikky was made possible by developing a technology exclusively for this format, which required a year of research for being able to prepare a perfect risotto in just 4 minutes, starting from scratch. Which leaves ample freedom of choice to the customer.

The first store has opened in Rome in the San Paolo area (specifically in via Chiabrera) but the programs are very ambitious.

In the restaurant in via Chiabrera with 10 seats at the counter, open every day for lunch and dinner, the “walking risotto” it is served with a tray and cutlery to be eaten on the road. “We are convinced that risotto can become an alternative to the world of fast food – says Enrico Tosco, group spokesman – a further option between pizza, hamburgers, wraps and ethnic food. In our restaurant, the customer will be able to live an experience comparable to buying pizza by the slice, thanks to a rich menu and quick preparation times for the dishes”.

In the "risotto menu" which includes 14 different choices remits a leading role for Karbonara, a tribute to the great classic of Roman cuisine, but there is also room for Risotto with saffron, risotto with porcini mushrooms, Amatriciana and Cacio e Pepe, as well as seasonal variations, from Salads of summer rice to festive Risotto with Cotechino and lentils. All "homemade" preparations with fresh products purchased from local suppliers, which give life to recipes developed by a catering professional and made with a technology which, in addition to allowing you to obtain perfect risottos, allows you to minimize the waste of food.

The project foresees the opening of numerous points of sale in Rome and throughout Italy in the coming years, and bases its gastronomic proposal on a menu whose objective is to reinvent traditional Italian first courses in a risotto version (all prepared with various types of Carnaroli). Kikky is also a project 100% focused on sustainability: a plastic-free format (no object used is made of plastic) that focuses on compostable bamboo for crockery and trays, on special packaging for Delivery and Take Away and on drinks sold exclusively in glass or aluminum. A zero environmental impact project with the flagship represented by the reuse of rice processing waste to make the trays that contain the ready meals.
