It comes from a very rare e ancient rosé vine, exclusive to the Comacchio area, in the sands of the Delta, the "Russian” which is characterized by a very thin skin with a fast maturation. it is theUrsiola, an almost forgotten wine but which has returned to shine for some years thanks to the work of some local producers. Even if its production is very limited, about 20 quintals of grapes per year 1.500 bottles, with a vinification made by unifying two different productions, the only ones in the whole territory. In fact, it is mostly used for family use and for a few local connoisseurs who have always appreciated this drinkable rosé, with a fruity nose and basically acidic palate, a little rough but enveloping with a degreasing capacity that cleans the mouth well between meals other,

Mentioned since the 11th century, Ursiola takes its name from the dialect of the Comacchio town of San Giuseppe. On XNUMX November it is customary to celebrate San Martino with eel and Ursiola.

This precious rosé belongs to the wines better known as i Wines of the Sands characterized by vineyards grown in sandy soils and brackish, humid and warm environments, generating more fragrant and refined grapes with good acidity. The most famous is the Eliceo Fortana Forest, cultivated in an area between the provinces of Ferrara and Ravenna, which is vinified both in its natural (sparkling) and sparkling version with the classic method. Also among the Doc del Bosco Eliceo White, Merlot and Sauvignon which have a slightly savory, light and aromatic taste.

Both the Fortana and the Russiola grapes are particularly demanding from the point of view of cultivation, even just a drop of dew during the ripening phase can jeopardize the harvest. For this reason, the harvest is done on the same day by three local producers: Emanuele Mattarelli della Mattarelli winery, Marino Sheets owner of Cà Nova and Sandro Colombi of Spineta Fund. In order not to distort the unique characteristics of the fruit, the bunches are processed with modern equipment.

With a alcohol content between 10 and 11°, Ursiola is a new wine from Bosco Eliceo, defined by Luigi Veronelli as the "page boy of the much better known Fortana". Savory and basically acidic, it goes well with fatty meat or fish foods. Traditionally with eel, cod, fried fish or after dinner with chestnuts.
