A "sip" of Rome: Egeria water becomes a beer

Here comes the "beer of Rome": the master brewers of the Roman brewery Oxiana have transformed the water from the historic Capitoline spring into a limited edition Keller which will be presented on November 16th.

If there is a deep bond, which from antiquity to the present day has proved to be indissoluble, it is that between Rome and the water. It starts from the legend of Romulus and Remus saved from the waters of the Tiber to get to the typical "big noses" that quench the thirst of tourists and citizens of the capital every day. Hence the project of a production that enhances the characteristics of Roman water. The source is the Fonte Egeria, in the heart of the evocative setting of the Appia Antica Park, where what the Romans know as the "Holy water" of Rome. A place considered sacred since ancient times, which in the past inspired myths and legends that guided the master brewers of the Roman Oxiana brewery.

The "beer of Rome" will be a Keller, one of the types in which the relationship with the water profile is very intense: "We were inspired by the low fermentations of Franconia - explains the master brewer of Oxiana Simone Proietti Appodia – where the contribution given by the characteristics of the water is central. In recent times the brewer, thanks to technological progress, is able to "work" the water to his liking and adapt it to the beer style he intends to produce, we have done the opposite: we have put the water, as it flows from the source, to the center of the recipe and identified the most suitable style. So we consulted the recipes from the late 800s and through the use of darker base malts and a wise use of hops, we have made balance the strong point of this beer”. 

A far from obvious undertaking, it must be said: Egeria water, in fact, has its own natural effervescence and is rich in mineral salts, including bicarbonates, which are not easy to manage in the brewing process. Never Oxiana brewers have risen to the challenge, creating a balanced beer, with an orange color and flavors of baked and cooked malts. A product that, thanks to its 5 degrees of alcohol, is perfect to sip as an aperitif, but can also be combined perfectly with pizza, first courses and white meats. “It was a bit like making a record – adds Appodia – because we looked for the style that most exalted the 'tools' we had available”.

The beer will be produced in a limited edition, with 2500 bottles, and can be previewed on November 16th, from 11.00 am to 18.00 pm, right at the Egeria spring, in via dell'Almone 111.
