Great statement for Italian haute cuisine in the The best chef awards 2022 which took place at Madrid. If the crown remains firmly on the head of the provocative Madrid chef Dabiz Munoz, enfant terrible of Spanish cuisine 3 Michelin Stars who wins the prestigious award for the second time with his DiverXO, followed by two other sacred monsters of world catering such as René Redzepi and Joan Roca, Italy puts fifteen flags in the ranking of top 100 world chefs (last year he had conquered 11) and his standard-bearer is called Massimo Bottura of the Osteria Francescana in Modena, twice winner of The World's Best Restaurant which is firmly placed in fourth place, followed in 14th place by Niko Romito and on the 17th from Riccardo Camanini of Lido 84, which this year also entered the top ten of World's 50 Best Restaurants 2022
Then we find Paolo Casagrande (26th), Mauro Uliassi (30th), Enrico Crippa (32nd), Giuseppe Iannotti (37th), then Antonia Klugmann in 58th place, Floriano Pellegrino in 59th, Felix Lo Basso in 68th, at 75th Diego Rossi, Moreno Cedroni was therefore placed in 79th place followed by Domenico Marotta (83rd), Norbert Niederkofler 89th and Stefano Baiocco 99th.
The surprise: Diego Rossi of the Trattoria Trippa in Milan surpasses starred chefs
The great surprise of two new entries leaps to the eye, that of Diego rossi Milanese of Trippa restaurant in Milan a real exploit, which places him in front of great chefs and starred chefs such as Moreno Cedroni, Norbert Niederkofler and Stefano Baiocco, and that of Felix LoBasso, Apulian patron of Lo Basso Home&Restaurant in Milan, 1 Michelin Star.
Finally, great recognition also for Frank Pepe, of the legendary Pepe in Grani pizzeria in Caserta which received the special prize The Best Chef Pizza Award defined «A patron saint of pizza».
Founded in 2015 by Polish neuroscientist Joanna Slusarczyk and Italian gastronome Cristian Gadau, The Best Chef presents itself as “a vibrant global community of food enthusiasts. A project dedicated to celebrating the many talented chefs who create the best food experiences around the world, as well as being a global family of like-minded people sharing culinary adventures. A common space where the old guard shares the core of the craft with the next generation, which in turn inspires new ways of thinking”.
The best chef 2022: the complex process of voting for an award that looks to the new generations
The voting process is quite complex. Firstly, there is a shortlist of 200 candidates. These include 100 “fresh faces” and the Top 100 from the previous edition which are automatically re-nominated. The 100 new faces are selected through a group of 150 anonymous professionals who through their travels scour the world and discover talents.
Professionals include food journalists, critics, bloggers, photographers, and other notables with extensive knowledge of fine dining. They're all industry experts, and their picks for each of the fresh faces come with an explanation of why they recommend them.
The shortlist of all 200 nominated chefs is announced each year at the end of April. The final Top 100 from the 200 shortlist is created from the votes of the 150 pros. According to a concept – say the organizers – which aims to showcase chefs, where they can pay homage to their peers” and therefore the group of professionals has a lower voting power. The votes of the chefs constitute 70% of the final result; the votes of the professionals make up 30% of the final results. This way, the chefs can influence the list more.
Voting is via a secure online poll where each member is sent a unique link with a simple voting process. Each person can vote for 10 chefs, choosing from a drop-down list and the scoring system is 10 – 100. Voting begins in early May with a one-month window to vote.
