Tradition says that way back in 1414 the Lord of Cremona Cabrino Fondulo, ruthless leader and enemy of Giangaleazzo Visconti, protagonist of grim stories of power, blood and oppression, invited the Pope and the Emperor Sigismund of Luxembourg to Cremona, With the purpose of throw them from the Torrazzo. During a sumptuous banquet in their honor, Cabrino Frondulo he had the two illustrious guests served an extraordinary dish in broth, as a cynical homage to the two unaware and imminently deceased. As chance would have it, this one pasta in broth was the object of great compliments from the Pope and the emperor Sigismund of Luxembourg. The dispassionate thanks for that royal dish therefore changed the d.'s mindespot, who renounced his evil intentions.

That's how I Marubini of Mubone, or Marubéen, these are the names of the dish served to the two illustrious guests, which became part of the gastronomic history of Cremona. To officially sanction these origins in 2003 some members ofAcademy of Italian Cuisine have defined with a notarial deed the birth of the recipe around 1500.
The dish is a dough of durum wheat flour and eggs, filled with beef marinated in vegetables or red wine, with the addition of veal roasted with butter and flavored with sage or rosemary. Instead of veal, you can use pork sprinkled with white wine. Grana Padano DOP and nutmeg are also added. In some areas, instead of veal or pork, "pistum" (Cremonese salami mixture) is used.
La making Marubino is quite laborious: we start with the preparation of the meat for the filling. The beef, before being braised or stewed, must marinate for around 10 hours with the vegetables, while the veal must roast in a pan with butter and oil and flavored with sage and rosemary. The pork, on the other hand, must be cooked in a pan with a splash of white wine. After that all the meats must be minced. The pasta, on the other hand, is made by working for about 15 minutes with durum wheat and soft wheat flour, eggs and olive oil.

Marubini, or Marubéen (probably from marù = chestnut, due to their shape and size, similar to those of chestnuts) are generally prepared to be brought to the table during the Christmas holidays or during special banquets.
It is not an exaggeration at this point to define Marubino as a true journey into the history and taste of the rich Cremonese gastronomic tradition, an immersion in the flavors of a territory enclosed in a treasure chest of pasta.
And the journey is the inspiring reason for an original initiative that will start from mid-January and which will last until February 25th freely inspired by the famous Camino de Santiago: the Cammino del Marubino, an itinerary to discover this true icon of the gastronomic tradition of Cremona and its territory.
A journey through the gastronomic history of Cremona and its territory with a passport to 24 restaurants
The initiative involves 24 restaurants located in the province of Cremona. Anyone who wants to take part will be able to find the appropriate information free of charge at the info point in Piazza del Comune in Cremona and in the restaurants themselves. Marubino passport, with which you can undertake your pilgrimage.
Each pilgrim will be able to go to the restaurants involved and consume a plate of Marubini, after which they will present their passport at the cash desk, which will then be validated with the restaurant's stamp, to testify their passage through that stage of the route. The objective is to collect as many stamps as possible, thus discovering the many recipes and versions of marubini offered in the various Cremonese restaurants.
The initiative is part of the events scheduled for the Il BonTà food and wine fair (24 - 26 February 2024 at CremonaFiere), in fact the awards ceremony will take place on 26 February at 14,30 pm in the IlBontà Events Room, where the ceremony of delivery of the compostelas, the iconic parchments received by those who conclude the journey reaching Santiago, to all those who have collected at least ten of the stamps present in their passport.
