Rich menu, like every weekend, on First&Food, the FIRSTonline magazine entirely dedicated to the world of cooking, food and wine and the agri-food industry. This week the chef is Antonello Colonna from Lazio, chef-entrepreneur who started from Labico, a small town in the Lazio hinterland, where his Resort still remains the reference point of his gastronomic-existential philosophy. Our expert Giuliano De Risi defines him as "restless, intolerant, provocative, in the depths of his anarchist and libertarian interior". Antonello Colonna's recipe presented is bucatini with cod cheeks and pecorino cheese: sea and countryside merge and find a harmonious synthesis in a fresh and easy-to-prepare dish.
