The first Table Appointments and Taste Workshops scheduled at Terra Madre Salone del Gusto, the most important event dedicated to good, clean and fair food organized by Slow Food, the Piedmont Region and the City of Turin, have been announced.

We therefore start on 8 October and continue until April 2021 with a rich schedule of events and initiatives that can also be followed from home with a tasting kit.

 It goes without saying that for various events the number of places is limited, therefore it is necessary to book on the website www.terramadresalonedelgusto.com. These are the Appointments at the Table and the Taste Workshops, two of the great classics of food and taste education that Slow Food has created in its thirty-year history.

Here are the first bookable events, scheduled from 7 to 12 October, while the program of Table Appointments and Taste Workshops until April 2021 will be released week after week.

The Appointments will take place at Eataly Turin and over four evenings, between 7 and 12 October, will feature starred chefs, chefs from the Alliance and from the taverns listed in the Slow Food guide.

It is precisely the cooks, with their work, who have in their hands the possibility of bringing customers closer to better eating habits, which reflect a way of producing that respects the earth and people and is attentive to animal welfare. How? Simple, by educating to pay attention to raw materials and to behave more responsibly towards the planet we inhabit.

It begins on the evening of Wednesday 7 October with a preview dedicated to the memory of Vittorio Fusari, celebrated chef and great friend of Slow Food. Fusari, who made a decisive contribution to the launch of the Slow Food Chefs' Alliance in 2010, passed away on January XNUMX of this year. Next October's event will see various Italian chefs in the kitchen who have shared with Vittorio an idea of ​​cooking made up of dreams, innovation, excellence and sustainability. The leitmotif of the entire edition of Terra Madre Salone del Gusto is the geography of ecosystems, a choice that is also reflected in the dinners of the following days:

On 8 October, the appointment with the chefs Antonio Buono and Giuseppe Rambaldi to explore the valley territories. The first, with a long experience as sous-chef at Mauro Colagreco's Marizur, today leads Casa Buono, a restaurant in Trucco, in Liguria, at the entrance to the Val Roja. The latter, on the other hand, once they left the stove at Combal.Zero in Rivoli, inaugurated Cucina Rambaldi in Almese, in Val Susa.

The common thread of the evening, one course after another, will be the attention to the territory, the choice of local products and respect for traditions, but always with an eye to innovation. Buono and Rambaldi: valley cuisine, can already be booked.

Not only Terre Alte, however: on 11 October we return to the city, for a dinner hosted by Cesare Battisti and the duo Tommaso Maio-Flavio Benassi. All three are members of the Slow Food Alliance, and their restaurants have been awarded the Snail by the Guide to Osterie d'Italia 2020. The recurring theme of the evening will be the relationship between the city and the surrounding countryside, from which to source raw materials sustainably produced.

Battisti comes from Milan, where with his Ratanà he offers a simple but far from obvious cuisine. Maio and Benassi, on the other hand, will be away from Bologna, where they manage the Trattoria in via Serra after spending about ten years a little higher up, in Zocca. Ratanà and Via Serra: biodiversity goes to town is already bookable.

Finally, on 12 October, we talk about the sea: a dialogue for two voices, one coming from the Tyrrhenian Sea and the other from the Adriatic. Both Michelin-starred: on one side Daniele and Andrea Zazzeri of the La Pineta restaurant in Bibbona, in Tuscany; on the other Antonio and Nicola Fossaceca of the Al Metrò restaurant, in San Salvo Marina, in Abruzzo. Tyrrhenian and Adriatic: starry seas compared is already bookable.

Reservations are also open for the Taste Workshops, another of the classic Terra Madre Salone del Gusto appointments. This year the novelty is called the tasting kit: indeed, because those who cannot reach Turin - which will host the events in the Eataly premises - will have the opportunity to receive the products at home, organizing a real Taste Workshop and sharing the event with your friends.

As per tradition, the Taste Workshops are an opportunity to savor cheeses and cured meats produced in a way that respects the environment and animal welfare, and sip top quality wines and beers.

They are a way to learn while enjoying, to get to know and deepen themes and products by stimulating the senses, to listen to the stories of those who made those products. The Taste Workshops can already be booked, both to take part in person in Turin and to secure the available kits.

Some examples of the excellences selected for the already bookable Taste Workshops? Italian and international wines, the Italian brewing panorama with suggestions taken from the 2021 Guide to Italian Beers just published by Slow Food Editore, "excursions" abroad to get to know the most important breweries and the great artisan knowledge of regional gastronomy, with cheeses and natural cured meats.

As for the tasting kits sent home: inside each one you will find the food and wine products to taste, the glass glasses for matching wines or beers and San Bernardo water in the new completely recyclable.

The Taste Workshops at home are all aimed at a group of a maximum of ten participants, except those on beers which are recommended for 6 people. For larger groups it is of course possible to purchase more kits.

On the day of the Workshop, an email will be sent with the link to participate in the appointment in streaming and follow the event from home, together with the producers, experts and the public present in the halls of Eataly Turin. The next day, then, the recording of the tasting will be available to follow it even on a deferred basis.
