Pecorino Toscano DOP takes an important, innovative step along the path of traceability and quality. to ensure, thanks to blockchain to digital techniques to spectrometry the uniqueness and transparency of the production processes of one of the most important Italian DOP cheeses with an eye to the conscious choices of the consumer who is scientifically protected from possible food fraud. The system developed by Consortium for the protection of Tuscan Pecorino DOP, the DQA (Department of Agri-food Quality) certification body for the entire supply chain e Farzati Spa, with its subsidiary Farzati Tech, in fact allows continuous and objective control which, starting from the milk used for the production of Pecorino Toscano, monitors the entire process of the product, from origin to distribution.

The biofingerprint created by Farzati SpA provides such certain information of origin. the molecules that make up the product. In this way the traceability path is mapped, precisely defining its imprint and its origin. Such technology called BluDev®, allows you to be able to release the foodpassport® of any product; in a nutshell, with this innovative technique, the product represents its own label, thus allowing the final consumer, via his smartphone, to be able to know the entire history of the product itself.

The one developed by the Tuscan Pecorino Consortium is therefore one highly technological tool that represents an important evolution compared to the systems already in use. Digital innovation has already arrived in the agri-food chain for some years, thanks to the need for clarity on the origin of products by consumers and the need for producers to provide this information and stand out in terms of transparency and quality of the respective productions. In this context, the introduction of blockchain technology within the traceability of agri-food products has also made an important contribution in terms of greater communicative impact.

Born in the financial world, blockchain technology has also found its perfect raison d'être in the agrifood sector, immediately representing a plus in terms of safety, distribution and irrefutableness of the product, thanks to the use of certain starting information and unequivocal. A venormous advantage in a sector such as the agri-food sector where phenomena such asitalian sounding or the gray market are increasingly common. It follows that the blockchain and the foodpassport® are essential technologies not only for informing the final consumer but also for reducing food fraud. Furthermore, it has proved to be an excellent tool for certification activities, so much so that the DQA will insert this technology within the Control Plan of Pecorino Toscano DOP. And, on the basis of this project, a "talking" label is already being studied, capable of telling the entire story of the product, from origin to distribution.
