Parma protagonist at the Alba White Truffle Fair

Parma haute cuisine will be one of the gastronomic excellences celebrated at the Alba Fair, on 12 and 13 November – Between Parma and Alba there is a collaboration, born in 2015, to become part of the network of UNESCO Creative Cities of Gastronomy .

It will be a weekend dedicated to Parma haute cuisine and the gastronomic excellences of the Food Valley that will be celebrated on Saturday 12 and Sunday 13 November in Alba, in the prestigious setting of the International White Truffle Fair of Alba, which this year celebrates its 86th edition. The collaborative relationship between the ducal and Piedmontese cities continues, under the banner of friendship: a friendship born in the summer of 2015, when Parma and Alba, united by a strong gastronomic identity and a heritage of historical/cultural beauties and landscaping, have applied to join the network of UNESCO Creative Cities of Gastronomy.

Parma, whose candidacy was accepted in December 2015, supports Alba, with the aim of helping her reach the same goal: in this context, the presence (June 2016) of Alba at Gola Gola! Festival, now reciprocated with a Parma showcase within the International Alba White Truffle Fair. In view of this objective, on Sunday 13 November, at 10.30, a TALK will be held on the stage of the Alba Truffle Show entitled: “Alba and Parma in dialogue on Unesco's Creative Cities for Gastronomy”.

The mayor of Parma will be present, Federico Pizzarotti, the mayor of Alba, Maurizio Marello, and the respective councilors for Tourism, Cristiano Casa and Fabio Tripaldi. Parma's culinary art will be the star of two gourmet appointments within the Alba Truffle Show. The first, called "Parma Ritual - The pleasure of tradition", is scheduled for 15 pm on Saturday 00 November.

For the gourmand audience of the Alba fair, the chefs Enrico Bergonzi, "Al Vedel" Restaurant, Filippo Cavalli, "Osteria dei Mascalzoni" Restaurant, and Antonio Di Vita, "Parma Rotta" Restaurant, will present some great classics of Parma cuisine: from herb tortelli with stuffed veal tip, to get to spoon desserts and meringue. The following day, Sunday 13 November, again at 15 pm, it will be the turn of chefs Nico Tamani, "Trattoria Vecchia Fucina" restaurant, and Mariano Chiarelli, "I Du Matt" restaurant: as part of the cooking show "Parma Gourmet – Creativity with taste”, the two chefs will propose in a creative key, and according to an all-Parma declination, ingredients such as pumpkin and balsamic vinegar, originally from the neighboring provinces of Reggio Emilia and Modena.

The aperitif proposal is also interesting and original, which focuses on the Malvasia dei Colli di Parma and on the bargnolino, a traditional peasant liqueur obtained from the infusion of wild blackthorn berries. Parallel to the two gourmet appointments, within the International Alba White Truffle Fair, Parma will have at its disposal a 200 mXNUMX tensile structure in Piazza Falcone: here visitors to the Fair will be able to both receive tourist information on the ducal city, which houses artistic works such as the Duomo and the Baptistery and which gave birth to Masters such as Giuseppe Verdi and Arturo Toscanini, both to taste and buy made-in-Parma gastronomic excellence. It will range from DOP such as Parmigiano Reggiano and Culatello di Zibello to traditional desserts. Five companies from Parma will offer them: Azienda Agricola Brè del Gallo, Azienza Agricola Ca' D'Alfieri, EatinParma, Nuova Pasticceria Lady and Ras.
