Investing in people's health in a preventive way with a healthy and delicious diet, but above all that teaches the importance of ingredients and is accessible to all. This is the mission of new bistro "Food Pharmacy”, inaugurated in Aprilia, in the province of Latina, which offers healthy signature dishes Niko Romito, 3-star Michelin chef at his Reale in Castel di Sangro in Abruzzo. It is a real pharmacy flanked by a bistro that sees food as a tool to support pharmacological treatment, highlighting the perfect marriage between well-being and taste. This does not mean that a balanced diet can replace it, but that it can strengthen our body yes.

A "pharmaceutical" menu inspired by the Mediterranean diet, created by the visionary Niko Romito and a team of pharmacists led by Marco and Elena Cecchini (CEO of the project) and the nutritionist Ferdinando A. Giannone. But what is meant by healthy food in the pharmacy? No white rice or boiled vegetables, but you can enjoy a lactose-free baked aubergine parmigiana, parmesan cream, veal roast beef with an emulsion of almond milk, capers and anchovies instead of the classic tuna sauce . Or the Maritozzo made without eggs or fat and filled with pistachio or chocolate creams or with whipped cream (made with hay milk from cows raised in pastures above 1000m above sea level, fed exclusively with herbs and forage), all water based.

So traditional recipes revisited by balancing the ingredients to prevent certain diseases. For example, by removing sugar or limiting salt thanks to the use of spices and flavourings. On the menu there are also many seasonal vegetables, legumes and cereals, without however excluding animal proteins, cooked in a healthy way for better digestibility. Furthermore, all dishes are accompanied by a card that explains their properties and are designed forremoval and delivered.

As for the selection of raw materials, it is the result of careful research quality e authenticity. The red meat comes from Italian-bred cattle raised in Italy and is cooked at a low temperature so as not to disperse the juices and then placed on the pan with aromatic herbs to intensify the flavor and seasoned with the brown sauce. An ideal second course for those with gastric digestion problems. While the blue fish caught is the one richest in good fats such as Omega3. They use marinating or low-temperature cooking to preserve all the nutritional virtues of the fish and flavourings, aromatic herbs and spices mitigate the strong smell of the sea. Parmigiano Reggiano cannot be missing from the "Food Pharmacy", obviously lactose-free, nutritious and easily digestible. They only use the organic one with at least 30 months of seasoning.

Niko Romito, for his part, has been enhancing the combination of taste and health in the kitchen for years, through multiple projects dedicated to the reform of collective catering and to the development of a line of healthy and functional products.
