As a child he wanted to be a doctor and it shows: his cuisine is entirely based on natural products and the pursuit of well-being. The recipe proposed by Giuliano De Risi is a refined risotto that plays on contrasts and lightness, with the original note of St. Peter's grass used in herbal medicine precisely for its antispasmodic and diuretic properties, and which owes its name to the fact that in ancient times its flowers were used as a bookmark in the Bible. The dish is called: risotto with pepper, robiola, St. Peter's grass, salted lemon.
