The Friulian chef's Christmas sorbet

Su First&Food, the FIRSTonline magazine dedicated to the tasty universe of food, the chef of the weekend is the starred Antonia Klugman, born in Trieste but Friulian by vocation. Her audacious choice was that of a restaurant a few steps from the border with Slovenia, to bear witness to an act of love for nature and the territory to be enhanced through creativity. The recipe that Giuliano De Risi offers you is crazy and absolutely consistent with the winter and Christmas period: it is a fir and blackberry sorbet, an original recipe that smells of Christmas, a Christmas in the woods with the scents of the area, from fir to truffles to blackberries, to blueberries (not really in season but still typical of the mountains…), interpreted with great creativity and delicacy as it is in its ropes.

However, the First&Food "menu" does not stop there: there is also a lot of talk about wines, linking the news of Made in Italy exports to the British elections and the imminent Brexit, which however apparently will not weigh too much on the wine market. For you also the historic white olive leucolea, planted in Italy during Magna Graecia, rediscovered for some time in the South and recently in Tuscia Viterbo, where its cultivation is accompanied by a rich archaeological and cultural project. In the end, food related to sports news: the new coach of Napoli, Gennaro Gattuso, has in fact been a successful restaurateur for many years. He started with the Gattuso & Bianchi Bistrot in Gallarate, on the outskirts of Milan, with a place that is both a fish shop and a fish restaurant.
