It is very important to eat vegetables at the beginning of a meal for many reasons; first of all to satiate; lettuce, peppers, fennel etc. In fact, they contain water-soluble fibers which swell once in the stomach creating a sense of satiety and thus breaking the appetite; this is very important for all subjects who go on a diet.

Not only that: those with diabetes problems must cultivate this habit well; if before a plate of spaghetti I eat e.g. courgettes, aubergines, grilled peppers, the glycemic surge will always be lower. This is because the vegetable fibers will get confused with the starches of the spaghetti not allowing our intestines to absorb all the starches and butter with which we have seasoned; if this habit continues we will have less blood sugar and cholesterol problems.

Finally, it must be considered that by eating vegetables at the beginning of the meal there will be no loss of the vitamin load of which the vegetables are supplied; vitamin C in primis but also K will in fact be immediately absorbed.

A tip: always eat seasonal vegetables; fennel, for example, are only winter vegetables; respecting seasonality will also help us in our health.
