Quality bread and gastronomy from prison: Cookery Rebibbia open to the public

«Gaetano: Chell what happened... that's enough, I'm starting again from three...» recited Massimo Troisi in one of his famous films. Lello Arena corrected him: "... From scratch!". “No, sir – Troisi answered him more convinced – “I'm starting again from… that is… three things I've succeeded in my life, why is it easy to lose chest too? Does Aggia start over from scratch? For three!”

And "Starting over from three" is the logo chosen for a wonderful initiative, the opening of COOKERY REBIBBIA, snack bar arose atexterior of the walls of the Roman prison to allow prison inmates to sell to the public bakery and gastronomy products made inside the prison laboratory.

An interesting social inclusion project #Ricomincio da 3#) to allow inmates to get back into the game by focusing on their strengths: personal skills, commitment, creativity and, above all, willingness to change.

The initiative was made possible thanks to the collaboration between the Prison Management and the CR SpA Group which on December XNUMXst last year, in full lockdown, allowed the factory to be reactivated and the selection of 7 inmates, 2 of whom are semi-free, to be trained as bakers.

In presenting the initiative, Annamaria Trapazzo prison manager and Edoardo Ribeca managing director of the CR Group, with the actor Pino Insegno as the exceptional presenter, underlined that Cookery Rebibbia is a real taste boutique characterized by elegant spaces open to the public from Monday to Saturday, from eight in the morning to twenty in the evening, where anyone can go not only to buy bread or have a coffee, but also to find all those gastronomic refinements that are well suited to making the stop pleasant and inviting.

The project that has now seen the light had been started in 2013 but was then stalled due to problems relating to the old management. In its initial phase it had taken shape thanks to the support of the Penitentiary Administration Department and the contribution of Cassa Ammende and national entrepreneurs such as Farchioni Olii SpA, still today the sole supplier of the 100% Italian flours used and always a staunch supporter of the redemption society of prisoners.

After a period of closure of the activity which took place in May 2019, the project is now reborn with renewed impetus not only in the production activities but, above all, with the concrete realization of its original purpose, that is to expand through work what is defined in technical terms the treatment offer of prisoners through the signing of a "deed of adhesion" with which they express their free but conscious participation in social rehabilitation.

The initial project therefore returns to light with renewed enthusiasm. It was enough to interpret and apply, in accordance with the constitutional provisions of art. 27, the will of the legislator, already expressed in 1976 and renewed in 2000, where it provides that "prison work, both outside and inside the Institute, can be organized and managed by public and private companies in premises loan for use by management and that the relations between management and companies are defined with Conventions”.

After the start of a long selection procedure, Cookery Srl was thus identified, of the CR SpA Group, operating for more than 30 years in the large retail sector in the Lazio Region and at the center of development projects focused on inclusion, eco-sustainability , and social responsibility, with which an agreement was stipulated which provides, among other things, to donate to treatment activities, at the end of the year, 1% gross of VAT of the products sold in the shop.

For the record the bread produced inside the Terza Prison of Rebibbia is distributed daily in the eleven stores of the CR SpA Group, and is appreciated by consumers.

With a view to sustainability and social inclusion at 360°, thanks to a partnership between the CR Group and the Italian Red Cross unsold goods are collected and redistributed to needy families and people in difficulty.
