“In the chocolate I put my thoughts, my words. With chocolate I express who I am and what I feel. For the chocolate I live of art”. As Paola Francesca Bertani talks about her great passion for chocolate which led her to convey the Elba area through high-end chocolate products, creating an opportunity for visibility for Elba products and the name of Elba in international competitions. With her, her raw materials are transformed into sweets that are so good, beautiful but above all elegant.

Behind it is not only the passion for the world of chocolate, Paola has carried out in-depth studies on this subject, acquiring great technical and sensory skills and becoming an excellent interpreter of art and harmonies of taste thanks to two levels of Chocolate Tasting brilliantly overcome.

Chocolate: Bertani's “art pralines”.

For its production chooses chocolate from small producers, which is traceable, representative of the territory of origin and ethical. The awards obtained in competitions over the years by the pralines of this strong-willed chocolatier are countless. Among its most representative products we remember The Gravels of Elba, inspired by the island's beaches, which arise from the union of a jelly with chocolate, all skilfully sugared by Paola and Jonata in the Turin laboratory with historic machinery also used for the production of artisan candies according to ancient Piedmontese recipes; Alcohol, pralines in which the alcoholic component finds the right balance with the best chocolates e gastronomic, pralines for those who are not afraid of dealing with unusual flavors that arise from original sweet/salty combinations.

Among the most loved and well-known inspirations from the artistic world is the praline dedicated to Frida Khalo – YOU DESERVE LOVE; hell, 9 pralines of different flavors that refer to some categories of the damned in Dante's Inferno; Fruits and Flowers "Colors like features follow the changes of emotions" dedicated to Picasso; the two new entries for 2021 (on the occasion of Napoleon's bicentenary) are the "Napoleon's marengo”, which takes its name from the 20-franc gold coin minted by Napoleon after the victory at Marengo, and “Walewska's kiss”, inspired precisely by the love that the Polish countess showed Napoleon.

Instead, its pralines Anson (which has apricots and grappa in the heart) e A tea with tigers (inside a water ganache made with Margarets Hope first flush darjeeling tea infusion) won the gold medal at the International Chocolate Award 2020, and the silver for Aleatic, which descends from the top rung of the ranking after dominating it in 2018 and 2019.
