Barilla, the pasta of the future printed at home in 3D

The prototype, developed thanks to the collaboration with the Dutch Tno, was previewed at Cibus 2016, the international exhibition dedicated to the latest food trends which started on Monday 9 May in Parma: it takes just two minutes to "print" a product fresh, thanks to the mixture of water and durum wheat semolina.

Where there is Barilla there is pasta… homemade. In the sense that everyone will be able to produce it at home on their behalf, thanks to the Printer 3D that the Emilian giant presented in preview at Cibus 2016, the international exhibition dedicated to the latest food trends which started on Monday 9 May in Parma.

The project started four years ago and is coordinated by Fabrizio Cassotta, Innovation pasta, ready meals and Barilla's smart food manager: the prototype, developed thanks to the collaboration with the Dutch Tno (Dutch Organization for Applied Scientific Research) will be able to churn out not only spaghetti and rigatoni but also the three new formats born from the over 400 ideas of a competition launched on Thingarage, a startup that deals with 3D design. Among the most interesting novelties we could mention the roses, the moons and the vortexes.

How is the pasta printed? Through a 3D printer, starting from the ingredients compressed in a cartridge: it only takes two minutes to obtain a fresh product, thanks to the mixture of water and durum wheat semolina. “We can imagine that in homes the pasta printer will have to be compact and with a greater emphasis on the variety of the product that can be prepared with it – Cassotta explained to Stampa – in companies and restaurants, on the other hand, bigger and faster machines will be needed. We continue to study the sector, but for now, it is impossible to make a forecast on the timing of availability on the market". In any case, there seem to be many open fronts: from domestic self-production to professional catering.
