Mountain Garlic: “White Gold” with a Refined Flavor
THEGarlic by Aroma Terrae It is not just any garlic. It grows under the influence of a harsh climate and mountainous terrain, and is characterized by a delicate but decisive taste, capable of enriching any dish without ever overwhelming it. A single clove, raw or sautéed, is enough to give character to any culinary preparation, giving an intense note that blends harmoniously with the other ingredients.
La sowing takes place at the end of October, when the bulbs are planted taking advantage of the autumn rains that allow the roots to develop. During the cold Lucanian winter, the plants receive the right amount of low temperatures, essential for developing their unique aromatic properties. Despite the climatic difficulties, the mountain soils and the fresh air contribute to making this garlic particularly valuable, with purple hues that brush the pure white bulb, giving it a fascinating appearance.
La collection happens between the end of June and the beginning of July, when the bulbs are ready to be dried naturally thanks to the ideal conditions of the Lucanian microclimate, dry and well ventilated. Natural drying is a practice that allows to preserve the organoleptic characteristics of garlic, keeping intact its freshness and its intense flavor.
The final result is a high quality garlic, which in addition to being a fundamental ingredient of Mediterranean cuisine, boasts numerous beneficial properties, such as antibacterial and anti-inflammatory. A true “white gold” that, despite its simplicity, gives character and flavor to any dish.
