Giancarlo Perbellini with his Casa Perbellini – 12 Apostoli, in Verona, is the big surprise of this year's Michelin Guide: it earns the prestigious Three Stars and makes it rise to 14 is the number of three-starred restaurants in Italy. Sono 36 two-star restaurants in total on this year's Guide with 2 new entries and 33 New Restaurants with a Michelin Star which involved 13 regions. In total, the selection of starred restaurants of the Michelin Guide Italy includes 393 establishments out of a total of 2024 restaurants from every corner of Italy that appear in the famous Red Guide.
The 70th edition of the Guide confirms a gastronomic scene full of vitality, animated by young talents who have gained experience within brigades led by chef mentors from whom they can draw inspiration and, at the same time, from a growing awareness that committed and sustainable catering is not a trend but a real necessity.
“The 2025 selection, with 393 starred restaurants – commented Gwendal Poullennec, International Director of the MICHELIN Guides – represents a snapshot that confirms the excellence of Italian cuisine, made of traditions, contaminations and innovation. The 36 new entries in the firmament of the peninsula, among which the new 3-star restaurant Casa Perbellini – 12 Apostoli stands out, testify to the liveliness of the sector that promises exciting culinary experiences, which tell the story of the quality of the products and the incredible variety of raw materials that this exceptional peninsula can offer”.
And the judgment expressed by the judges of the Guide speaks of emotions in assigning Casa Perbellini the maximum recognition of three stars: "In the historic center of Verona, next to Piazza delle Erbe and a stone's throw from the most famous balcony in the world - that of Romeo and Juliet - stands the new home of Giancarlo Perbellini. In a place that has made history - the 12 Apostoli - where the chef trained as a boy, now a concert of flavors is staged, combining tradition and innovation while respecting seasonality and raw materials. The chef pays homage to and reinterprets Italian cuisine with modern techniques and a personal touch, offering you an experience that is worth the trip. Two new entries are registered in the category of two MICHELIN stars, or the restaurants that are worth the detour: Marco Galtarossa of Villa Elena in Bergamo and Matteo Temperini of Campo Del Drago in Montalcino.
About Galtarossa, the Michelin judges wrote: “The recent move seems to have given new life to this young chef who offers a modern cuisine that enhances local ingredients through meticulous research and artistic presentation. Each dish is a work that pleases both the eye and the palate and combines complex and layered flavors with meticulous attention to detail. The duck dish is memorable: breast, livers in ravioli with celery and a crepe of stewed leg. Inside the historic villa of San Vigilio in Bergamo Alta, the restaurant offers a breathtaking panoramic view, excellent service and the expert guidance of the mentor, Enrico Bartolini”.
And as for Matteo Temperini they underline that “Castiglion del Bosco is not only 3 Michelin Keys for the superlative hospitality, now also a stop for which it is worth making a detour and tasting the personal cuisine of the chef, which enhances Tuscany and the best that the territory can offer. Among the memorable dishes that he creates with creativity and the use of fresh and seasonal ingredients, there are the gastronomic proposals with the first autumn mushrooms from the nearby woods, such as the gnocchi dell'orto with chanterelles and porcini mushrooms and the glazed veal sweetbreads with artichoke cream and roasted lemon”.
33 new MICHELIN Star restaurants. Among these, many chefs have an exceptional mentor: Antonino Cannavacciuolo receives the Star in two restaurants, Cannavacciuolo Le Cattedrali by Laqua in Asti and Cannavacciuolo by the Lake in Pettenasco (NO), led respectively by Gianluca Renzi and Gianni Bertone. Davide Oldani sees a new star assigned to the Olmo restaurant, in San Pietro all'Olmo (MI) entrusted to Riccardo Merli, while Massimo Bottura at the Al Gatto Verde restaurant, with Jessica Rosval at the helm, conquers the star and also the Green Star.

The 70th edition of the MICHELIN Guide has awarded 11 new green stars, bringing the total number of restaurants in Italy with this emblem to 69. The Green Star is a symbol that distinguishes restaurateurs at the forefront of sustainability and can be awarded to any restaurant, not just Starred restaurants or Bib Gourmands. In assigning the recognition, inspectors take into consideration multiple factors: the production of raw materials, respect for work and support of local producers, waste reduction, waste management, actions aimed at minimizing the use of energy resources and the impact of the structure on the environment, sustainable training of young people, are just some of the themes.

The region with the most new restaurants is Lombardy, 1 two-star and 9 one-star Michelin restaurants, for a total of 10 restaurants. In second place are two regions with 5 new single-star restaurants, Campania and Tuscany, while in third place we find Emilia-Romagna with 4 new one-star Michelin restaurants.
In the Michelin Star ranking by region, Lombardy maintains its leadership with 61 restaurants (3 three Stars, 7 two Stars, 51 one Star), Campania confirms its second place with 50 restaurants (1 three Stars, 7 two Stars, 42 one Star), while on the third step of the podium we find Tuscany with 44 restaurants (1 three Stars, 5 two Stars, 38 one Star). Piedmont slips to fourth place with 35 restaurants (2 three Stars, 3 two Stars, 30 one Star), while Veneto confirms its fifth place with 34 Starred restaurants (2 three Stars, 3 two Stars, 29 one Star).

In the province ranking, two cities from Campania are confirmed among the Top 5: Naples, which confirms its position at the top with 27 restaurants (1 three-star, 6 two-star, 20 one-star) and Salerno, in fifth place with 18 restaurants (1 two-star, 17 one-star). Rome is in second place with 23 starred restaurants (1 three-star, 3 two-star, 1 one-star), followed by Milan with 20 starred restaurants (1 three-star, 4 two-star, 15 one-star). In fourth place we find Bolzano with 19 restaurants (1 three-star, 2 two-star, 16 one-star).
